Have you ever cheated and nipped to the supermarket to panic buy cupcakes only to slip them into elaborately decorated cases and say you simply rustled them up in the kitchen the night before? Well, you'd hardly be the first and certainly not the last!
At some point most of us have cursed our culinary skills, our lack of time or felt frustrated by yet another unsuccessful attempt at being MasterChef.
How often have I gone to a dinner party and marvelled at the delights served up by my host, then on returning the invite, sat back and thought 'how am I ever going to match this?' This has happened to me time and time again, my fantasises of being the next Mary Berry are all too frequently squashed.

Not only does she provide group lessons that are creative and fun, she also tries to educate the children about the nutritional value of what they are eating. With her guidance and supervision they not only learn about what they are making but create some pretty delicious dishes along the way! Today I was with the fabulous Melanie, and I told her I was a little partial to sweets and dessert. I explained I'd become a little tired of rolling out my tired old Lemon Drizzle Cake and Apple Pie so she promised to show me how to make the perfect Strawberry Cheesecake.

On the list ( Hmmm, all ingredients are easy to find, looking hopeful! )
250g Digestive Biscuits.
100g Melted Butter.
1 Vanilla Pod.
600g Soft Cheese.
100g Icing Sugar.
285ml Pot of Double Cream.
Topping: More often referred to as the best bit!
400g pinned strawberries, halved.
25g icing sugar.
Method: The Technical Bit!
Butter and line a 23cm loose-bottomed tin with parchment paper.
Put the biscuit in a plastic food bag and crush to crumbs.
Transfer the crumbs to a bowl and pour over the melted butter.
Tip them into the prepared tin and press down firmly into the base to create an even layer.
Place the soft cheese, icing sugar and vanilla seeds in a bowl, then beat with an electric mixer until smooth.
Tip in the cream and continue beating until the mixture is completely combined.
Spoon the mixture into the biscuit base and spread evenly.
Puree half of the strawberries with 25g of icing sugar and 1 tablespoon of water.
Pile the remaining strawberries onto the cake and pour over the puree.
So, with a recipe that even I can easily follow, I'm going to be whipping this up for my nearest and dearest this weekend. Perfect with afternoon tea, or as a lush dessert, actually is there ever a wrong time for Cheesecake?
